Each month this year I plan to share a kid favorite recipe from our family cookbook. Last month was Dino-Nugget Parmesan, this month please try our tamale pie! The ingredients listed are enough to make 1 pie, 8 servings. We usually need to make two for the 5 of us...
Ingredients:
3/4 Cup Cornmeal
15oz. Chili Beans (remove from sauce, but reserve sauce)
1/3 Cup crushed El Matador Tortilla Chips
1 Egg, slightly beaten
3/4 Cup Shredded Cheese
2 Cups Water
1 Tablespoon Chili Powder
1Teaspoon Cumin
Directions:
- Heat oven to 375 degrees. Grease 9" pie plate.
- Mix cornmeal, water, chili powder and cumin in 2 quart sauce pan. Heat to boiling, stirring constantly. Next reduce heat to medium. Cook about 6 minutes, stirring frequently, until mixture is thick (like grits). Remove from heat. Let stand 5 minutes, then stir in egg.
- Spread cornmeal mixture in pie plate. Bake, uncovered, for 15 minutes. Spread beans over cornmeal, and sprinkle with chips. Drizzle chili bean sauce over chips to desired amount, and top with cheese.
- Bake uncovered for 20 minutes, or until center is set. Let stand 5 minutes. Enjoy!
